A century and four generations ago...
the Cascio Family first began making their Italian Sausage for family get-togethers.
In 1912 the Cascio and Modica families came to the United States from Cefalu and Monreale, Italy. In 1918 they settled in the Northwest Lousiana area where they were involved in farming and produce. Bossier City became their home and the future site for two family businesses - Cascio's Food Mart and Cascio's Market Bistro.
In the 1930's, Pete Modica and Mary Cascio-Modica began making Italian Sausage for their family at holiday times. They raised their own hogs and cows, selecting the choices cuts of pork and beef for sausage making. Cornshucks were used to link the sausage.
In 1945, the father and daughter team of Salvatore and Constance Cascio opened a small grocery and produce stand. In 1946, Salvatore went back to his home town in Italy, and his son Albert, along with sisters Constance and Mary, continued the tradition of making Italian Sausage while running the family business.
Over the years the sausage recipe was refined. A unique modification was string linking opposed to cornshuck linking. In the late 1950's, the present recipe was formulated with weights and measures so that it could be passed from generation to generation. By this time the popularity had grown enough to begin selling Italian Sausage throughout the year.
The reputation the Casios have for using only the finest quality products has grown, and today Albert's son, Rocky, continues to offer the finest quality Italian Sausage available in mild, hot, and "lite" varieties.
